How to Truss a Chicken

You must know how to truss chicken if you frequently roast it. Trussing allows it to keep its shape while being roasted. Apart from roasting, other cooking processes also require trussing a chicken. You will also need a work area with sufficient lighting.

Ingredients

  • one whole chicken
  • a cutting board
  • pieces of string.

Steps to Truss a Chicken

  1. Place the chicken on your cutting board.
  2. Clean it properly. Make sure the cutting board has also been cleaned and is dry.
  3. Position the chicken breast side up. The chicken’s tail should face you.
  4. Locate the center of the chicken’s back.
  5. Slip a string under this spot. Ensure that the ends are perfectly even.
  6. Draw up the string to the chicken’s sides.
  7. Let the string encircle the wings.
  8. Pull the string to your direction. Doing so will make the chicken’s wings lay flat on its sides. If the wings do not follow, repeat the previous steps.
  9. Make the strings cross at the base part of the breast.
  10. Wrap the string carefully around the chicken’s drumsticks.
  11. Pull the string tight until the legs cross.
  12. Hold the chicken’s tail end.
  13. Wrap a string around this part.
  14. Pull the string tight until the cavity of the chicken is fully covered.
  15. Position the chicken to the breast side up position again.

  17. Take the ends of the string and bring them to the front of the chicken.
  18. Tie the strings to a firm knot.
  19. Cut off any excess string.
  20. Your chicken is now trussed and is ready to be cooked.
