How to Cook Venison Sausage

Venison is made from various species of deer meat and can be eaten as a variety of meats including steaks, roasts and sausages.  There are diverse varieties of venison sausage which can be fresh (without curing salt), cured (containing some sort of curing mixture or salt), dry which means no cooking was done and semi-dry such as smoked sausages. The recipes to cooking venison sausage are endless, incorporating methods such as frying, broiling, smoking and baking.  Venison meat is lean with no fat; hence they are supplemented with pork for flavor and fat.  There are some ingredients that are common to any venison sausage recipe chosen.  Here is basic recipe on how to cook your own venison sausage.

Tools Required

  • Large mixing bowl
  • Refrigerator
  • Oven
  • Sausage casings

Ingredients Required

  • 4 1/2 lb. ground venison
  • 1 lb. ground pork sausage
  • 2 tbsp. salt
  • 2 tbsp. sugar
  • s2 tbsp. hickory smoked salt
  • 2 1/2 tsp. garlic powder
  • 2 1/2 tsp. mustard seeds
  • 2 1/2 tsp. black pepper

Instructions

  1. Mix pork and venison together in bowl
  2. Add spices/seasonings to bowl and mix well
  3. Cover bowl and place in refrigerator for 24 hours
  4. Remove bowl from refrigerator and mix ingredients again to ensure proper marinating
  5. Return to refrigerator for three more days
  6. Remove from refrigerator and place mixture into sausage casings
  7. Place in oven for eight hours at 140 degrees
  8. Sausages can also be smoked for 12 hours in an outdoor smoker or fried

Tips and Warnings

  • Any fat found on the venison (usually external) must be removed as the fat is inedible.
  • When frying venison sausages use medium heat
