How to cook Flank Steak

Flank steak is obtained from the stomach muscles of the cow. It is also referred to as the bavette. It is best described as long and flat and is a major ingredient in fajitas. Flank steak that has a vibrant red colour is most suitable for cooking as it means that it was derived from a healthy cow. The best cuts of flank steak are cut across the grain to improve the overall quality and texture of the meat. Though the price of flank steak has risen steadily over the years it is still relatively inexpensive when compared to other beef steaks. However, flank steak is less tender than loin or rib steaks but is still a great component in many dishes. When prepared correctly the result is astounding. A few ways to cook flank steak will be highlighted here.

Instructions

Grilled/Broiled flank Steak

  1. Before grilling or broiling the flank steak it must be marinated to tenderize the meat.
  2. Remove the cuts of flank steak from the packaging and place them in a large enough bowl.
  3. Mix the seasonings separately in a smaller bowl that will be used to make the marinade, be sure to use garlic which has meat tenderizing properties.
  4. Combine the marinade with the cuts of flank steak and rub it all over the steaks. Ensure they are completely drenched with the marinade before allowing the contents of the bowl to sit. It can be marinated overnight or at room temperature for a few hours.
  5. To broil place the cuts in a broiling pan 2-3 inches above the heating source. Do not close the oven door. Allow them to cook on each side for no longer than 10 minutes. Once they are cooked on one side turn them over with a metal spatula and cook for another 10 minutes at most.
  6. Remove the cuts from the oven and serve.
  7. To grill the cuts simply place them on a preheated grill and cook for a total of 21 minutes at most. Be sure to turn them over with the spatula when needed.
  8. Remove from the grill when finished and serve.

Stir-Fried Flank Steak

  1. Wash and place the flank steak into a large dish.
  2. Place a large wok over a medium-high flame and allow it to heat.
  3. Remove the flank steak from the dish and place on a cutting board. Cut the steak into small pieces being sure to cut the meat across the grain to improve texture.
  4. Season with soya sauce garlic and other choice seasonings and allow them to marinate for at least 15 minutes.
  5. Add some oil to the preheated frying pan which should be hot enough.
  6. Add the pieces to the oil and stir fry; this should take no more than 10 minutes in total.
  7. Once it is done remove and serve as desired.

Tips and Warnings

  1. Do not overcook the flank steak as this will make it less tender.
  2. Do not consume the marinade that is placed on the raw flank steak.
  3. Flank steak may be placed in a large well sealed freezer bag in the freezer for up to two weeks.
