There is no better vegetable out there than the beet. In Alternative medicine its can be used to fight against infections tumors and other ailments. They are known from ancient times as a good laxative. They help with digestive and blood-related problems. In roman times it was also considered an aphrodisiac this is probably due to the fact that the juice is a rich source of Boron which plays an important role in the production of human sex hormones. It is also effective in lowering blood pressure so it’s all around one very healthy choice.
Required Materials
- Beets
- Vinaigrette (made earlier and stored at room temperature)
- Sweet Onions
- Parsley
- A hardboiled Egg
- An Orange

- Knives

- Oven
Instructions
- Wash beets removing any dirt from the beetroots be careful when washing the thin skin is to remain intact for cooking
- Trim the beets leaving at least an inch of the leaf stems attached and do not remove the root. The stems and roots are removed after cooking
- Place trimmed beets in a roasting pan adding a little water for steam cover the pan with foil and place in the oven. Roast the beets at 425 Degrees F (220 Degrees Celsius) do this for about 30-45 minutes or until beets are easily pierced with a knife.
- Remove the beets from the oven and then slip off skins off under running water then to proceed to slice or dice them
- If Boiling cook the beets for 20-30 minutes or until beets are tender
- In the case of a Microwave cook the beets with some water for steam for approximately 8-15 minutes
- Proceed to peel the orange saving the zest for later use. Remove the juice from the orange, matching the beets to both the juice and the zest.
- Dress the beets with the Vinaigrette
- Chop up the Sweet onions parsley and hardboiled eggs and mix them with the beets making a hearty salad
- Serve at room temperature or warm
- The beets greens can be used to eaten as well like any other slightly bitter greens so it’s best we stored these for a later time
- Note well to prepare and dress the beets before mixing with other vegetables if making a salad as the beets ruby red coloring will seep into everything else.
