Boiling: The Traditional Method of Preparing the Dish
Pour 1 ½ cup of water in the saucepan and boil the water. Put a teaspoon of butter and ½ teaspoon of salt to the boiling water. Add a cup of couscous or semolina wheat in the water and cover the saucepan. Remove the pan from heat and steam the wheat for three to five minutes. Add three tablespoons of lemon zest and stir the dish. Serve immediately.
Sweet Couscous

The ingredients in this recipe include two cups couscous, three cups water and two cups sweet raisins. To make the delicacy tastier and more delectable, add two tablespoons butter, an onion, four tablespoons blanched almonds, ½ cup chopped dried apricots and two tablespoons cinnamon. Other ingredients include ½ teaspoon turmeric, a teaspoon of ground ginger, ½ teaspoon salt, three tablespoons honey as well as two chopped oranges.
Boil the water in a pan. Put the semolina wheat in a clean bowl and pour the water in the bowl. Add the raisins and cover the bowl. After 15 minutes, drain the raisins and the wheat. Heat the pan in low fire and add the butter. Sauté chopped onion and spices. Add the remaining ingredients except for the oranges. Simmer the mixture for half an hour. Place a steamer on top of the pan. Steam the semolina wheat for half an hour. Put the steamed wheat in a clean plate and pour the sauce. Garnish with chopped oranges.
